This e-book formatting guide had loads of good tips on doing just that, especially in Word, the predominant word processing software. And after reading it with a good familiarity with the program, these tips WILL work properly. The only thing is that the book itself is horribly formatted and hard to read. I think the author either missed a step or two in the preparation or forgot to change some spaces/values, because the numerous numbered lists show up as thin columns down the right side of a Kindle page, with the numbers and letters denoting the level floating in space on the left, often a line above the text. Having read a lot of poorly formatted e-books, this wasn't very daunting for me to handle, but it might put off the target audience.
